If you're like me, time is crucial. As a mum of 3, it's important to me that my kids are eating wholesome healthy and ayurvedic. My reasons are simple cooking ayurvedic guarantees my children are healthy. Each herb and spice has a healing benefit, but time doesn't always allow me in the kitchen cooking gourmet meals. I do make sure our grocery list is purely organic, so that leaves my mind at ease.
Rajma (Red Kidney beans) is full of protein, folate, magnesium and fiber. Its element is earth, so it's very grounding. Rajma pacifies Pitta and Kapha and aggravates Vata unless you are Pitta-Vata by nature. Let me try to explain, we are born with an individual dosha that leads our life, but as the day passes through doshas, so does our life span. Most children are experiencing Kapha. Once they become teens and young adults, Pitta kicks in, so Rajma is an ideal staple for children, teens, and young adults unless they are experiencing a dosha imbalance.
If you are an on the go mum like me might mean you do not always remember things, and you forgot to prep a meal plan for the next day, so soaking beans is not an option. That's why a good old can of organic beans is good to keep in the pantry.
Things you'll need:
1 can of organic red kidney beans
1 can of organic tomato sauce
1/2- 1 cup of water
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp black pepper
1 tbs of sumac
1 or 1/2 inch ginger
2-3 garlic cloves
1 cup of basmati rice
1/2 cup of peas
1 tbs of toasted sesame seed oil
Cilantro to garnish
What you'll do:
In a mortar, using a pestle grind garlic and ginger to a paste-like substance (doesn't have to be perfect). Heat pan, you'll be making beans in with sesame oil. Add ginger and garlic, let it brown a little add spices. Smell the aroma, then add rinsed and clean beans, let cook 5mins or so, then add tomato sauce let it cook for 5-10 mins, add water as needed depending on how thin or thick you want the sauce. Let it cook 10 mins more.
Wash basmati rice until water runs clear.
Using another pot for rice, add rice and 2 cups of water. Let it start to boil, add peas lower heat, and add cover until the rice softens and soaks up all the water.
That's it! You're all done.
Serve together. Garnish with Cilantro.
